DELIVERED FRESH EVERY DAY

Every bit of beef and chicken we cook comes from Liverpool Meat & Fish Market — Liverpool's wholesale meat market in Old Swan, trading since 1931. It's delivered to our kitchen on 4 Ashfield Road in Aigburth every day, so what goes on the griddle today arrived today.

FROM THE MARKET TO YOUR ORDER

That's the beef in every smash burger, pressed onto a hot griddle for the crispy edge, and the chicken in our wings, boneless, tenders and burgers, cooked when you order.

WHY IT MATTERS

A smash burger has nowhere to hide — it's mostly beef and heat. Buying local and fresh every day is the difference you can taste, and it means our money stays with a Liverpool market that has been feeding the city for over ninety years.

A MARKET WITH 800 YEARS OF HISTORY

Liverpool Meat & Fish Market traces its roots back to the royal charter of 1207, growing from small medieval stalls near the River Mersey into the city's wholesale hub on Prescot Road.

  1. 1207

    A ROYAL CHARTER

King John grants the charter that makes Liverpool a port and a weekly market town. Fish and provisions are sold in small yards near Chapel Street, Pool Lane and Derby Square.

  2. 1545

    THE MARKET RIGHTS

Sir Richard Molyneux acquires the rights to the market and fair fees. Liverpool Corporation buys them out in 1773, giving the town sole authority over its markets.

  3. 1830

    STANLEY MARKET

Stanley Market opens for livestock: the beginnings of the site the market stands on today. Liverpool Corporation acquires it in 1901.

  4. 1889

    GREAT CHARLOTTE STREET

A new fish market opens with 40 fish stands and 26 cellars, trading thousands of tons of fish brought in by road and rail from Grimsby, Hull and Fleetwood.

  5. 1931

    PRESCOT ROAD OPENS

The Earl of Derby opens a combined abattoir and meat and fish market on Prescot Road, with an overhead rail carrying carcasses straight from the slaughterhouse to the chill rooms.

  6. 1971

    FRESH MEAT & FISH

Slaughtering and livestock trading end, and the site turns to what it does today: fresh meat and fish for the city.
